Breakfast in need of a revamp? Here’s how to create 5 healthy toast topping ideas that are high in protein and will have you and the family looking forward to breakfast!

I’m just going to admit this upfront: my all-time, hands-down favorite breakfast is…Special K with Silk Vanilla Soy Milk.
But now that I live over in Europe, I can’t get that magical combination of cereal + milk, and it forces me to explore different (probably more healthy) breakfast options.
And when it comes to breakfast that has the potential for maximum healthy / fun / easy factor, toast is where it’s at!
So here are a few fun ideas for healthy toast toppings. They each pack a healthy punch of protein to kick your morning off right, AND they’re all ridiculously easy to make. Double win.


Strawberry Greek Yogurt Toast
I know it might sound weird, but Greek yogurt is perfect on toast! Creamy, spreadable, and higher in protein than regular yogurt. You’ll need:
- 1 piece of toasted bread
- 2 to 4 tablespoons of Greek yogurt
- 4 or 5 strawberries (or other berries)
- Optional: Drizzle of honey


Almond Butter Banana Toast
For when you’re craving something sweet, this combination satisfies (and the only sugar comes from the banana). You’ll need:
- 1 piece of toasted bread
- 2 tablespoons almond butter (can also use peanut butter)
- ½ of a banana
- Pinch of ground cinnamon


Cottage Cheese Blueberry Toast
It’s time we level up the under appreciated cottage cheese. It’s creamy, filling, and can be sweet or savory (today we’re going the sweet route with berries). To make this cottage cheese toast you’ll need:
- 1 piece of toasted bread
- 2 to 4 tablespoons cottage cheese
- Handful of blueberries
- Optional: Drizzle of honey


Cucumber Hummus Toast
You’ll be in Mediterranean bliss after whipping up this creamy, crunchy, snack-worthy hummus toast. It’s one of my favorite ways to eat hummus (and can be made with any flavor of homemade hummus you want). You’ll need:
- 1 piece of toasted bread
- 2 tablespoons hummus
- A few slices of cucumber
- Coarse sea salt


Avocado Egg Toast
It wouldn’t be a toast post without the holy grail of toasts…avocado! We’re keeping it super simple with just a handful of ingredients:
- 1 piece of toasted bread
- 1 teaspoon of oil
- 1 egg
- ½ of an avocado
- Pinch of salt and pepper

Let’s talk about the bread
In the journey to really good toast, you should probably put some thought into the bread. You want something that’s healthy (like wholegrain) and hearty enough to hold the mountain of toppings you’re about to throw at it. Here are some of my favorite breads to use for toasting:
- Whole grain bread with lots of seeds (it’s best straight from the bakery and cut into thick slabs)
- Sourdough bread, which isn’t always whole grain but tastes amazing when toasted and piled with toppings

Instructions
Cucumber Hummus
- Spread hummus on toasted bread. Top with sliced cucumber and a pinch of salt.
Almond Butter Banana
- Spread almond butter on toasted bread. Top with sliced banana and a pinch of cinnamon.
Avocado Egg
- Heat oil in a pan on the stove over medium heat. Add egg and cook until white is firm but yolk is still runny, about 5 minutes.
- Use a fork to mash the avocado onto toasted bread. Top with cooked egg, salt, and pepper.
