Dates are natural sweeteners that also add fiber and potassium to many recipes!

Most of the world’s dates are grown in the Middle East, but California supplies the vast majority in the USA. Look for fresh dates that are plump looking and have a slightly glossy look to their skin. Avoid dates that have crystallized sugar on their skins. Fresh dates that have been “cured” are partially dried and will last a while. Store them in a sealable container at room temperature for up to 2 months. They will continue to dry out, and their sugars will slowly come to the surface.
